To be more precise, of the 744 apples tested, the USDA found 82.7% of them contained diphenylamine (DPA) at concentrations between 0.005 and 4.3 ppm, well below the EPA’s current tolerance level of 10ppm but potentially above the European standard of 0.1 ppm.

This “superficial scald” is a storage disorder of the skin that affects apples unless a coating of antioxidant is applied. DPA is extremely effective at preventing scald; an alternative would be storing apples in a low-oxygen environment Low oxygen controlled atmosphere storage with oxygen at concentrations between 0.5 and 1.0%.

Such skin disorders occurs naturally during storage and are more likely to happen as the duration of storage increases and the temperature gets closer to room temperature.

The EPA last revised the thresholds for DPA in the US in 1997. Their limit is currently set at 0.01 ppm (parts per million) in meat and milk and 10 ppm for apples.

Up to 10 parts DPA for 1,000,000 parts apple: yum!

(If you do the math, that means the limit for DPA in apples is 1,000 times greater than the limit the EPA has put on meat and milk.)
